Hashed beef for vegan without beef

Make a hashed stew for vegan! In Japan it is called Hayashi stew.

The soup can be arranged by adding various ingredients. Let’s put the vegetables left in the refrigerator in the soup! It also works as cleaning! You can reduce garbage without wasting vegetables.

Ingredients (For 2-3 serving)

  • 2 potatoes
  • 1 onion
  • 1/4 carrot
  • 2 Cremini mushrooms
  • 1 clove of garlic
  • Tomato paste 200ml
  • 250 ml of red wine
  • Water 600 ml
  • Vegetable broth (powder) 3-4g
  • 2 tablespoons of tomato ketchup
  • 1 tbsp of Worcestershire sauce
  • 1 tablespoon of sweet japanese vegetable sauce
  • 1 teaspoon soy yogurt
  • Butter (for vegetarian)
  • Salt and pepper to your liking
  • Appropriate amount of herbs such as bay leaf and rosemary

How to make

  1. Finely chop the garlic and fry in olive oil until the scent comes out, then fry the onions, potatoes and carrots.
  2. Add all the red wine, and when the juice is halved, add herbs such as bay leaf, water, ketchup, Worcestershire sauce, sweet japanese vegetable sauce, and soy yogurt.
  3. Boil for about 5 minutes. The more you stewed, the taste becomes stronger. Season with salt and pepper to your liking. Vegetarians add butter at the end.

Point

  • Adding soy yogurt eliminates the thorns in the sauce, ketchup, and tomato paste, making it mellow.
  • Some red wines may not be sweet enough. In that case, I think you should add sugar. I think It will be delicious even with apple or berry jam. (The taste is not guaranteed ♡)

If the stew remains, you can easily arrange it into a so called quiche.
