Tips for making outstanding Japanese Potato salad

Ingredients (For 1 serving)
- 2-3 potatoes
- 1 cucumber
- Onions 1/4 to half
- A little salt
- Vinegar (1tsp)
- Mayonnaise (1-2tbsp) (Vegan: mayonnaise without eggs)
- A little black pepper
How to make
- Peel,cut and boil the potatoes
- While boiling the potatoes, slice the cucumber, sprinkle with salt and leave for about 10 minutes. When the water comes out, wrap the cucumber in a bleached cotton or kitchen paper and squeeze the water tightly.
- Slice the onion, sprinkle with salt, soak it in water for 10 min, wrap it in bleached paper or kitchen paper, and squeeze it tightly. This will remove the hot taste of the onions.
- When the potatoes are cooked, discard the hot water in the pot, put a pinch of salt, heat again and shake the pot to completely remove the water. (When throwing away the hot water, it is easier to keep the potatoes in the pot, hold the potatoes with chopsticks, and throw away only the hot water.)
- Crush the potatoes while warm and add vinegar.
- When the potatoes have cooled, add cucumbers and onions and adjust the taste with mayonnaise, salt and pepper.
Point
- It is better to drain the water from the cucumbers and onions.
- If you like, you can put it in boiled egg and boiled carrot.
- When throwing away boiling water, let’s throw it away while running water so as not to damage the sink & melt the pipe.
