Vegetarian:
It does not use meat or fish, but includes recipes that use eggs and milk.

Vegan:
It does not use any animal products. (It is not halal.)

About the recipe

In terms of amount of seasonings, there may be differences between Japan and overseas.In Japan, the amount is as follows.

1tbsp=15g
1tsp=5g
1cup=200cc

The recipe is based on the traditional “Ichiju Sansai” in Japan.
It was a samurai diet.

Ichiju Sansai means one soup and three vegetables represent.Rice is not counted because it is eaten with each meal.
Rice, miso soup, and three side dishes were the basis of the Japanese meal from long time ago.

Therefore, in addition to one meal plate, we have created categories for dish and soup.

Japanese dietary information

Many foreigners find it difficult for vegans and vegetarians to eat in Japan. As you say, avoiding animal foods when eating out is quite difficult.

But for the past 1200 years, Japan has had a rule that creatures should not be killed. For this reason, soy sauce, miso, and other soybean-based seasonings have been developed. Not only seasonings, but also tofu and natto etc… It seems that many foreigners find it difficult for vegetarians and vegans to live in Japan today, but there are surprisingly many Japanese recipes that are vegetarian and vegan.

I was born and raised in Japan, so I basically introduce Japanese home cooked food. However, Japan is a country that incorporates various cultures, so I am also trying Chinese food, Korean food, Italian food, Mexican food, etc.

Basics when making Japanese food
When making Japanese food, there is an order to add seasonings.

1: sugar, cooking sake, sweet cooking sake(mirin)
2: salt
3: Vinegar
4: Soy sauce
5: Miso

Put the sweets first so that the sweetness soaks into the ingredients, and put the soy sauce and miso last so that their aroma remains.

As this order shows, soy sauce is to give the dish a lovely toasted smell basically. Adjust the taste with salt for an elegant taste, and adjust with soy sauce for a rustic taste.

It depends on the person’s taste.
